One of my favorite foods, especially when going to a restaurant, is a burrito bowl! However, going out to eat frequently can become extremely costly very fast. While experimenting with different spices, I found a mix that I love that is just as good as a burrito bowl from a restaurant and is probably cheaper ;)
What you'll need:
two chicken tenderloins, diced
half a zucchini, quartered
about 1/4 cup of onions, diced
half a can of black beans, rinsed
1/2 cup of corn
1 tsp ground cumin
1 tsp chili powder
1 tsp paprika
1/2 tsp cayenne pepper
1 tbsp minced garlic
1/4 cup of water
1 tbsp olive oil
Directions:
Add olive oil and chicken to pan and cook for about 5 minutes. Added zucchini and onions and cook until tender. Add black beans, corn, and minced garlic and cook for about another five minutes.
In a separate bowl, add chili powder, paprika, and cayenne pepper and mix. When mixed, add spices and water to pan, turn heat down to simmer, stir and heat until water is absorbed.
Serve over brown rice with cheese and condiments of your choice. I added cheddar cheese, Trader Joe's chunky, mild salsa and Green Goddess Dressing!
If you have leftovers, you can easily add them to tortillas and make quesadillas!
