My favorite plant based meal on a cold day!
I grew up not being a huge fan of chili in general and I wasn't really sure why. I used to be a big red meat eater as well so it never really made sense to me why I didn't like chili. As I got older, my appetite for chili began to grow as did my love for plant based meals! So, I decided to take this classic dish and make it plant based.
Making this recipe plant based was super duper easy! It was as simple as swapping ground meat for a soy product and swapping cheese for nutritional yeast! Nutritional yeast is a great way to get vitamin B12 in your diet if your vegan/vegetarian and it adds a little cheesy flavor! You can eat this dish with practically anything you want. My favorite way to eat chili is with either brown rice or low-sodium tortilla chips! Or, you can simply eat it by itself!
Why plant based?
Eating a plant based meal (or a few) every week can be very beneficial to your health! Why? Plant based meals tend to be lower in saturated fat which is what we typically want to strive for. Plant based meals are also higher in fiber, vitamins, and minerals which have very positive health effects.

You can easily purchase the ingredients for this dish at Trader Joes! Or, instead of using soy chorizo, you can purchase Gardien's Beef-less Ground at your local grocery store and/or Walmart.
